Chef Chef Marcus Samuelsson hosted a panel discussion last night on behalf of his new website foodrepublic, with the topic being “How far off is the $50 pizza?” The panelists included Marcus himself, Eddy Chai, co-owner of retail sensation Odin, visual artist Sanford Biggers and Brooklyn Flea co-founder Eric Demby. Demby discussed “Smorgasburg,” an extension of his hugely popular flea market enterprise that now features about 100 purveyors. The “Brooklyn Flea Food Market” as it’s known, offers every type of food imaginable on Saturday’s on the Williamsburg waterfront between North 6th and North 7th St., at the East River. Demby’s most interesting point was that 3 out of 4 vendors are now men and the big trend towards authenticity and knowing where something comes from, is not just reserved for the fashion and retail world. Oh, and the must-have skill at the moment that will set you apart from your fellow dudes? Pickling.
